Potatoes are one of the great comfort food, especially when with a satisfying blend of lean beef and Broccoli Florets plus reduced-fat sour cream and cheddar cheese filled. Add a tossed salad and you have a healthy and hearty meal that will make you feel good.

4 Medium russet potatoes
8 Ounces 90%-schlanke minced meat
1 CupBroccoli Florets, finely chopped
1 CupWater
1 CupReduced-fat cheddar cheese, divided
1/2 CupReduced-fat cream
1/2 TeaspoonSalt
1/4 TeaspoonFreshly ground pepper
3 Cut shallots, sliced
(1) Pierce potatoes and prick with a fork. In the microwave and 50% once or twice turn performance, until the potatoes soft, are about 20 minutes cooking. (Or use the setting "Potato" on your microwave and cooking according to the instructions of the manufacturer.)
2. Meanwhile, Brown meat in a large skillet over medium-high heat about 3 minutes stirring. Transfer into a large bowl type. Increase heat to high the Pan, lid, to, add broccoli and water to boil you until it is soft, 4 to 5 minutes. Drain the broccoli; Add the meat.
(3) The upper third of the boiled potatoes carefully cut off; keep the tips for a different purpose. Draw the inside out in a medium-sized bowl. Put the potato shells in a small baking dish. Add 1/2 cup cheddar, sour cream, salt and pepper on the inside of the potato and with a fork or potato masher crush. Shallots and add the potato mixture of broccoli, and meat; Stir to combine.
4. Divide evenly the potato mixture among the potato shells and top with the remaining 1/2 cup cheese. Microwave on high, until the filling is hot and the cheese, 2 to 4 minutes is melted.
Vegetarian variation: replace the minced meat with soy-based substitute or omit completely beef and increase the broccoli to 1 1/2 cups and the cheese in 1 1/4 cups.
To make ahead: Prepare and stuff potatoes. Cover and refrigerate up to 2 days. Microwave and serve.
